GEO 17 Geotrichum candidum is a yeast that gives a mold-like appearance and extremely mild flavor and aroma. GEO 17 upgrades the appearance and movement of Penicillium candidum strains; which when utilized in blend will help limit proteolysis and lengthen the storage time of the ripened cheese.
A key agent in the maturing of specific cheeses, Geotrichum candidum embeds quickly on a cheese surface and synergistically affects the implantation on flora, for example, Brevibacterium linens that require a neutral environment.
