Description

This curd cutting Cheese Harp is designed for cutting set curd in a pot or compact cheese vat. One vertical harp and one horizontal harp allow the curd to be cut in opposing directions.

Key benefits of using a Cheese Harp

  • An initial single cut can be crossed with an opposing cutting motion to help create evenly sized curd cubes.
  • Different cheese styles require different curd sizes. Camembert and Brie use larger, gentler curd cuts, while cheeses such as Cheddar, Gouda, Reblochon, Tomme, Swiss and Parmesan may require smaller curd sizes, including hazelnut or grain-sized curd.
  • The cutting motions can be repeated until the required curd size is achieved.
  • Harps can be ordered in different frame sizes and cut sizes to suit specific cheesemaking requirements.
  • Custom harps can also be made to match the profile of a cheese vat, providing a closer fit and helping minimise overcutting of the curd.
  • The stainless steel frame and wires provide a durable cutting tool for routine cheesemaking.

Pro Tip: When making repeated cuts for a smaller curd size, make an initial rough cut and let the curd settle for a few minutes before stirring and cutting again. This allows the curd to shrink and firm, helping later cuts stay clean and reducing the chance of the curd crushing or disintegrating into the whey.
