Edam brining control affects the salt level, rind, flavour and texture of the finished cheese. Salt Movement in Edam Cheese

During brining, salt moves from the solution into the Edam cheese while moisture and whey move out. The rate of movement depends on brine salinity and temperature, as well as the cheese weight, dimensions, moisture, acidity and time in the tank. A larger or thicker Edam wheel will often need more time than a smaller piece or slice. However, time should not be considered on its own. Milk composition, curd handling and moisture levels can also affect how the cheese absorbs salt. These factors influence the qualities associated with Edam, including its mild flavour, smooth texture and firm rind. Young Edam is generally mild and creamy, while aged Edam can develop a firmer texture and a sharper, more nutty flavour as the cheese ages.

When the solution is warmer or cooler from one batch to the next, cheese left in the tank for the same time may not achieve the same salt uptake.
