Most bleu and blue veined cheeses ripen best at cool cellar temperatures with high, but not saturated, humidity. A practical target for a small facility is 10–12°C with relative humidity around 92–95%, measured at cheese height rather than near the ceiling. These conditions support mould growth, protect moisture, and keep the rind from either drying out or becoming slimy.

Humidity that drops too low leads to cracked rinds, dull flavour, and higher trim losses. Humidity that climbs too high causes condensation, mats of unwanted mould, and in the worst-case small pools of water on shelves. A good rule of thumb is to pick one set of room targets early in the year and make changes slowly, so you can read the sign the cheese is giving you instead of chasing short term swings.

Airflow shapes how heat and moisture move through your bleu cheese room. Blue cheeses need oxygen after piercing, so air should move gently through the room rather than sitting in still pockets, but strong drafts dry the surface too fast. Your goal is a slow, even song of air movement that reaches every corner without blowing directly onto the cheese.

Too much fan speed will pull moisture from the rind and leave you with tough, thick edges that never quite soften, even after many days. Too little air movement lets pockets of cold, damp air form near walls and ceilings, and you may see a build-up of different moulds in those spots. In small facilities, you do not need large industrial fans to care for bleu cheese. Choose units that are easy to clean, quiet enough for a small space, and built from materials that can handle moisture.

Look for fans with multiple speed settings or variable speed drives so you can reduce speed when cheeses are young and increase slightly as they firm up. Wall or ceiling mounted circulation fans are usually better than floor units, because they keep walkways clear and make wash down easier. Avoid cheap fans that are hard to clean, because over the days and months dust and mould on blades will spread into the room and affect the life of your cheeses.

Fan layout decides whether your room has smooth, even conditions or hot and cold patches that change from shelf to shelf. Airflow and humidity are two sides of the same coin. High air speed makes the room feel drier to the cheese surface, even when the number on your humidity display looks fine. Low air speed can leave still damp corners where condensation forms, even if the overall reading seems similar from day to day.

The safest path is to run at a high enough humidity to protect the rind while keeping air speed low and steady. Make small changes and give the room time to respond; do not push both the fans and humidifier at once. When you walk into the room, take a few seconds to feel the air on your face and hands, listen for the song of the fans, and look for signs on the cheese that tell you whether you need to change direction.

Consistent bleu cheese quality depends on regular checks rather than complicated rules. Make a habit of checking and writing down temperature and humidity at the same time each day, so you can spot trends rather than reacting to single readings. Over a month, that gives you a clear picture of how the room moves with the seasons and with different batch sizes.

Clean fan guards, blades, and visible parts of the fan coils on a set schedule, such as once a week, so dust and mould do not build up. Plan regular CIP cycles for the Milk Cooling Tank and associated lines as recommended, and check valves and pumps for smooth operation. When people visit your room, explain the key rules clearly, doors closed, no long conversations inside, no leaning on racks, so your airflow and humidity stay stable, and your cheeses can live their best life in every stage of ripening.
